Chocolate Chocolate Chip Cake Recipe

I made this cake for our first Thanksgiving gathering tomorrow ... really good!



CHOCOLATE CHOCOLATE CHIP CAKE


1 18.25-oz package chocolate cake mix
1 3.9-oz package instant chocolate pudding mix
1 cup vegetable oil
4 eggs
1/2 cup hot water
1 cup sour cream
1 teaspoon vanilla extract
1 cup mini semi-sweet chocolate chips

1. Preheat oven to 350 degrees Fahrenheit. Grease and flour a bundt pan.


2. Combine cake mix, pudding mix, oil, eggs, hot water, sour cream and vanilla. Beat until smooth. Stir in 1/2 of the chocolate chips. Pour batter into bundt pan. Top with rest of chocolate chips.


3. Bake for 1 hour. Allow to cool for 10 minutes, then invert cake onto wire rack and let cool completely.

And then, for the glaze, I do this:

CHOCOLATE GLAZE

4 oz milk chocolate chips
3 tbsp butter
1 tbsp milk
1 tbsp light corn syrup
1/4 tsp vanilla

In small, heavy saucepan or microwave oven on medium, melt chocolate chips with butter. Stir frequently until smooth. Remove from heat. Stir in milk, syrup and vanilla. When glaze is cool, pour onto cake. Let glaze run down sides. Chill about 10 minutes to set glaze.

Jentry's First Saturday Evening Out ...

One of our insurance companies has an annual meeting for their customers to come and eat some yummy Rockhouse BBQ! This year's meeting was last night! So, Jentry and the rest of us got ready and enjoyed our free meal! Here are some photos of me and the kiddos before we left. Judson had not had a nap all day and so, as you can tell, he was not in the best of moods!

Just an update on the Coalson Family ...

Wow, we have been busy this past month since Jentry made her arrival! The weekend before we were scheduled to go in for induction, our house went under contract and we closed on selling it on October 29th! We lucked into a rent house that is actually a house Jason has listed ... of course, it will probably sell now that we have moved in! Ha! :) Here is a picture of Judson giving chubby Jentry kisses...


Judson is getting to be quite the character! He pronounces his F's with an H sound and it is very funny or "hunny" as he says! He is obsessed with wearing his cowboy boots and always says he "wants to put the boots on." But, if they are on and he wants them off, he says he "wants to take the boots on." We now know the difference b/c of the "take" thrown in when he wants them off! And ... when his boots are on ... his pants MUST be on the outside of the boots, whether they are jeans or pajama pants! He is very obsessive about this issue and if they are not on the outside, then he tells you to "hix it" aka fix it! Here is a picture of him in his Thomas Pajamas and boots ... with the pants correctly "hixed."


Jentry is doing great too! She gained 1 lb. and .9 oz. in the 8 days between her 6 day checkup and her 2 week checkup! Mom and I weighed her Saturday and she weighed about 10 lbs. and 6 oz. She is eating really well! :) Now, if November 18th can just get here soon, then I can get the "ok" to start excerising! I need my treadmill to keep all the weight off that I have lost ... I am down about 26 from where I ended with Jentry and I had only gained 16 lbs. thank goodness! Here is a photo of "Miss Popular," as her shirt says! She also is wearing her jeans with pink stitching for the first time and her cute pink shoes!


Jason is very busy, but Judson has become his wingman in almost everything he does. We bought a dozer a few weeks ago and Judson wants to go with Jason every time he leaves b/c he knows that he's either going to "ride the dozer," show real estate outside, or play golf! Jason has to leave before he wakes up in the morning to avoid a meltdown! They went to the football game on Friday night to watch Hico play Hamilton! Judson was excited about going b/c Jason told him he could get popcorns (as Judson calls it) and coke. He loved it and also got M&M's ... his other favorite!

And before I finish ... here are a couple of "hunny" stories on Judson from the past week ...

We rented Ice Age: Dawn of the Dinosaurs for Judson last weekend. At the beginning of the movie, the tiger is chasing a deer and it makes you think its trying to catch it for dinner until a bit later and they are only racing. Well, while the tiger seemed to be chasing its dinner, Judson got so nervous and started telling us he wanted to watch Tom and Jerry (just to get the intense Ice Age movie off the screen)! He gets that from my dad and I ... we never finished the Wizard of Oz and neither one can handle intense or scary movies ... we pace if we are at home and its an intense part! Haha!

The other "hunny" was that Judson went to the Hamilton Barbershop to get a haircut last week. The barber kept giving him candy (it was really gum ... which he does not know about yet) to bribe him to sit still. When he was done, he had a handful of gum. Kevin Gilmore came in and asked Judson if he could have some of his gum .... Judson paused and told Kevin "get you a haircut!" I guess he didn't want to share and thought the barber would give Kevin some if he sat still during his own haircut!

I will quit writing now ... it's just that it has been a while!
